Banquet Sous Chef

 Job Description        

The Banquet Sous Chef is responsible for supporting the Executive Chef with overseeing the performance of all culinary operations. To include, management and organization of kitchen facilities, menu planning, hot and cold food preparation, following menu specifications, and maintaining kitchen equipment. The position constantly maintains CCAE standards for marking and dating of food perishables, First-In/First-Out (FIFO), and complies with OSHA regulations.

 

 Qualifications        

 Minimum of three years of formal experience as a Lead Cook or Sous Chef with one to three years’ experience in hotel or convention center environment.  Current food handlers or Serv Safe certificate.  Skilled in food waste control and menu planning.  Skilled in employee training and development.  Excellent food presentation skills.  Knowledge of hot food preparation.  Knowledge of basic cold food garde manger (presentation).  Knowledge of basic knife skills and equipment usage.  Knowledge of basic sauce making, dressings, salads, etc.  Able to work overtime, weekends and holidays and extended hours as business dictate.  Must wear appropriate uniform at all times.  Excellent communication skills.  Positive interpersonal skills. License/Qualifications: • Must have current Food Handlers or Serv Safe Certificate.
